Cinnamon Oatmeal Muffins

Ingredients

  • 1 c lowfat milk
  • 2/3 c quick cooking oats
  • 1/4 c wheat germ
  • 1 1/2 c flour
  • 1/3 c sugar
  • 2 eggs
  • 2 egg whites
  • 5 T melted butter

Preparation

Step 1

Combine oats and milk and set aside. meanwhile in another bowl, stir together wheat germ, flour, sugar, baking powder, cinnamon and salt. Make a crater in the center of the dry ingredients. beat together the eggs and egg whites until light colored and frothy. Melt butter and pour into center of dry ingredients. Quickly add oatmeal and eggs, then stir just until the dry ingredients are moistened. Grease the muffin tins well with butter and divide batter evenly among 12 tins. Bake at 400 for 25 min.
