c pecans lightly toasted
sticks 12oz unsalted butter, room temp
c plus 2 T powdered sugar
Insert metal chopping blade in food processor and add flour, pecans and salt. Pulse about 15 times to incorporate. Remove and reserve. Process butter, powdered sugar and vanilla until smooth and creamy. Add the flour mixture and pulse until dry ingredients are just incorporated. Turn out on a lightly floured sheet of waxed paper into 2 equal mounds. Refrigerate for 30-60 min, until stiff enough to shape into logs. Roll into logs about 10 in long and 1 1/4 in in diameter. Wrap in saran wrap and refrigerate overnight. Preheat oven to 350. Line baking sheets with parchment paper. Slice cookies 1/4 in thick and place 2 in apart. Bake for 15-17 min, until edges just begin to turn brown. Let cool completely.
