Ingredients
- 1/2 lb spaghetti
- 3 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp sugar
- 1 tbsp balsamic vinegar
- 1 28-02 can tomatoes, with juice, chopped
- 1/2 cup dry red wine
- 1 tsp chili powder
- 1/2 tsp black pepper
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh parsley
- 1 tsp celery salt
- 1/2 cup low-fat/low-sodium vegetable stock
- 1/2 cup grated Parmesan cheese

Step 1
In a large pot, bring water to a boil. Add spaghetti and cook for about 7 to 8 minutes, until tender but firm. Drain and keep warm. In a large saute pan or saucepan, neat olive oil; saute onion and garlic for about 5 minutes. In a separate pan, heat sugar until it caramelizes; combine sugar with balsamic vinegar and add to onion mixture. Stir in tomatoes with their juice, wine, chili powder and black pepper. Simmer for 5 minutes; add basil, parsley, celery salt and vegetable stock; simmer for another 5 minutes. Spoon sauce over spaghetti, sprinkle with Parmesan cheese and serve.
