Stir-fry of Cherry Tomatoes and Marinated Artichokes

Melty and crispy, a joyfull stir-fry.

Ingredients

  • 1/2 ActiFry spoon olive oil
  • 1 ActiFry spoon sugar
  • 1 3/4 cup oz button onions (fresh or frozen)
  • 3/4 cup marinated artichoke hearts
  • 1 lb cherry tomatoes
  • 2 ActiFry spoons toasted pine nuts
  • 1 ActiFry spoon pesto

Preparation

Step 1

Put the button onions, oil and sugar in the ActiFry and cook for 10 minutes until caramelised.

Add the other ingredients and continue cooking 10 minutes to stew the cherry tomatoes and blend the flavors.

Serve in small plastic bowls or on small slices of country-style bread to absorb the juices.
