Ingredients
- 1 chopped onion
- 2 seeded and chopped jalepeno peppers
- 1 can black beans (rinsed and drained) OR 1 1/4 c. home cooked black beans
- 1 can corn (rinsed and drained) OR 1 1/4 c. frozen corn kernals
- 3/4 c. corn meal
- 1 can stewed tomatoes OR 1 can chili tomatoes OR 2 chopped fresh tomatoes
- 1 1/4 cup milk
- 2 tsp. chili powder
- Grated cheese for topping
Preparation
Step 1
Saute' onion and jalpenos in water or broth. You can substitute 1/4 c. green chopped peppers if mild flavor is desired). Mix in rest of ingredients. Sprinkle cheese on top or mix into casserole.
Bake in a casserole dish for 30 mins. at 350 until warmed through. This is even BETTER the next day.
