Quick Sherry Spice Cake

Ingredients

  • 1 c flour
  • 1/2 c sugar
  • 1/2 t cinnamon
  • 1/2 t allspice
  • 1/2 t baking soda
  • 1 dash salt
  • 1 egg
  • 1 egg white
  • 1/4 c water
  • 2 T sherry
  • 1/4 c molasses, unsulphured
  • 1/2 T butter, melted
  • whipped cream or vanilla ice cream, optional

Preparation

Step 1

Grease one 9 in square pan generously and preheat oven to 375.
In med mixing bowl, thoroughly combine flour, sugar, cinnamon, allspice, baking soda and salt. Set aside.
In another bowl, whisk together the egg, egg white, water, sherry, and molasses. Melt butter in small pan or microwave then whisk into the egg mix. With a hand mixer at med speed, beat the egg mixture and dry ingredients, about 1-2 min.
Pour into pan and bake for 30 min.
