  • 1 lb. ground beef
  • 1 large onion,chopped
  • 1/2 green bell pepper,chopped
  • 1 (11 oz.) can kernel corn,drained
  • 1 (10 3/4 oz.)tomato soup
  • 1 cup water
  • 1 tblsp. chili powder
  • 1 tsp.salt
  • 3/4 tsp. pepper
  • ~ cornbread topping ~
  • 3/4 cup cornmeal
  • 1 tblsp. all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 cup milk
  • 1 tblsp. veg.oil

Preparation

Step 1

~ cornbread topping ~
Stir together first 4 ingredients.Add egg,milk,and oil,stir well.

~ pie ~
Cook first 3 ingredients over medium- high heat,stirring until beef crumbles and is no longer pink;drain.Stir in corn and next 5 ingredients.Reduce heat and simmer 15 minutes.Pour beef mixture into lightly greased 2 qt. baking dish.Spread cornbread topping over beef mixture.Bake at 425 degrees for 20 min. or until golden brown.
