Step 1

Heat oven to 400 and place pan in pre heated oven. Then make batter in a large bowl by whisking together 4 room temperature eggs, 3 tbsp. fresh chopped herbs such as thyme, chives and oregano, 1/2 tsp salt, pinch cayenne and nutmeg. Whisk in 2 c warm milk gradually so eggs don't cook. Whisk in 2 c all purpose flour until smooth. Remove pan and coat with non stick spray. Put about 1/3 c batter in each cup and top each with shredded asiago cheese. Bake at 400 in middle of oven and put tray below in case overflows, for 30 minutes or until done.
