Skinny Spinach Dip

Obviously, the first step to lightening this guy up was to ditch the mayo. Luckily, most of the flavor in this dip comes straight from the seasoning packet, so switching out the mayo for something just as creamy but much healthier doesn’t change the taste much.

Ingredients

- 2 x 250g packets of Frozen Spinach
- 1 x 30g packet Spring Vegetable Soup Mix (dry)
- 1 Cup Non-fat cottage cheese, blended until smooth
- 2 Cups Non-fat Sour Cream
- 4 Spring Onions, Chopped
- 1 x 190g Water Chestnuts, Sliced
- Water Chestnuts can be optional
- 1 large round loaf of sour dough
Preparation
Step 1
1. Slice the top of the sour dough and hollow out the inside of the bread. The pieces can be cut to make little pieces to dip with.
2. Mix all the ingredients together to make the dip
3. Place the dip mixture into the hollow cob and serve with the bread pieces around the loaf.
That takes the calories per quarter cup serving from 118 to 30, and the fat from 12 grams to almost none – not to mention you get extra protein from the cottage cheese. If you eat it with veggies, that makes a really healthy snack!
