Ingredients

  • 1/2 c chopped dates ****
  • 1/2 c warm water
  • 1/2 c butter softened
  • 2/3 c sugar
  • 1/4 c clover honey
  • 1/3 c "sour cream" base instructions in misc
  • 2 eggs
  • 1 t vanilla
  • 1/2 c finely chopped almonds
  • 2 t grated lemon peel
  • 1 1/2 c flour
  • 2 t baking powder
  • 1/4 c milk

Step 1

In a small bowl, combine water and dates and set aside for 5 min.
Preheat oven to 325.
Meanwhile beat together butter and sugar until fluffy. Add honey, "sour cream" eggs, and vanilla, beating just until blended. Drain the dates.
Stir in almonds, grated peel, dates into the batter.
Sift together flour and baking powder. Alternately add the dry ingredients and the milk to the batter while stirring.
Turn into a greased and floured 9x5x3 loaf pan and bake for 65 min. Let cool 10 minutes before slicing.

NOTE-for lower oxalate version, sub 1/2 t lemon extract for lemon peel, or eliminate lemon and increase the vanilla to 1 1/2 t.
