Kentucky Butter Cake

This cake is best made the day before as its more moist and flavorful when it rests overnight.

Ingredients

  • 1 c butter cubed at room temp
  • 2 c sugar
  • 4 eggs
  • 1 T vanilla
  • 3 c flour
  • 1 t kosher salt
  • 1 t baking powder
  • 1/2 t baking soda
  • 1 c buttermilk
  • Butter glaze
  • 1/3 c butter
  • 3/4 c sugar
  • 2 T water
  • 2 t vanilla

Preparation

Step 1

Preheat the oven to 325.
Grease a 10" bundt pan liberally. Dust the pan with flour and set aside.
Place all the cake ingredients in the bowl of a mixer fitted with the paddle attachment. Mix on low for 30 seconds and then increase the speed to med and mix for 3 min.
Pour the batter into the prepared pan and bake 75-70 min until a toothpick in the center comes out clean.
When the cake is done make the glaze. Combine all ingredients into a small saucepan over med low heat. Stir continuously until the butter is melted and the sugar is dissolved. Do not bring to a boil.
Poke holes in the cake using a knife and pour the glaze evenly over the warm cake while still in the pan.
Allow the cake to cool completely in the pan and then invert the cake onto a serving platter.
