Ingredients
- 1 cucumber
- 1 red onion
- 1-2 tomatoes
- 1/2 cup chopped fresh parsley
- 1/2 cup olive oil
- 2 tbsp fresh lemon juice
- salt and pepper to taste
Preparation
Step 1
Cut cucumber lengthwise in 8 thin slices, then into tiny cubes. Place in a medium mixing bowl.
Peel and dice onion. Add to cucumber.
Seed and dice tomatoes. Add to other ingredients
Chop and add parsley.
Toss with olive oil and lemon juice. Season with salt and pepper. serve immediately.
