Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 stick (8 tablespoons) butter, melted
- 1 cup buttermilk
- 1 large egg

Step 1
Preheat oven to 400 degrees. Butter a muffin tin or drop cupcake
paper in each of the tin slots. Put all dry ingredients into a mixing
bowl and whisk to blend. Put all wet ingredients into a separate
bowl and whisk to blend. Pour wet ingredients over dry ingredients,
stirring only until everything is moistened. It will probably
have a few lumps. Spoon the batter into the muffin cups. Bake 15
to 20 minutes until muffins are golden. Cool five minutes before
unmolding.
