Ingredients

  • 1 Tbs. instant dry yeast
  • 4 cups whole-grain rye flour
  • 1/2 tsp. salt
  • 2 cups buttermilk
  • 3 Tbs.canola oil

Preparation

Step 1

In bowl, mix yeast, flour and salt.Microwave buttermilk until lukewarm; stir in oil. Add to flour mixture. Knead 10 minutes until smooth, adding 1/2 cup more flour if needed. Place in oiled bowl,cover with plastic wrap and leave to rise in a warm place for 11/2 hours. Knead lightly and transfer to a greased loaf pan. Cover with plastic wrap and set aside for 1 hour to rise again. Bake at 350* for about 45 minutes, brushing with water occasionally.
