Lemon Curd

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 stick (1/4 cup) unslated butter
  • 2 large eggs plus 1 large yolk
  • 1/2 cup fresh lemon juice
  • 2 tablespoon finely grated fresh lemon zest

Preparation

Step 1

In a metal bowl set over a saucepan of simmering water. Cook lemon curd ingredients, whisking, until thinck enough for whisk to leave distinct marks and bubbles first appear on surface. 12 to 15 minutes. Pour curd through a sieve into a bowl and cool.

Lemon curd may be made 1 week ahead and chilled covered.
