Ingredients
- 4 red onion, peeled and sliced in 8th's but not all the way through. You want the onion joined at the bottom.
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
Preparation
Step 1
Place onions in a large bowl, then toss with oil and vinegar. Be sure to coat well.
Place opinions in a 9x13 greased baking dish
Pour remaining oil and vinegar on top
Put salt and cracked pepper to taste
Then cover with foil
Bake at 425 for 25 -30 minutes or until onions are opened and tender.
Uncover and cook for an additional ten minutes.
Serve with a sprinkling of capers.
