Green Chili Chicken Soup

This tasty change of pace from classic red chili boasts garlic seasoned chicken, green chiles and three kinds of beans

Ingredients

  • SOUP
  • 1 tablespoon butter
  • 2 medium onions, coarsely chopped
  • 1 cup dry sherry
  • 1/4 cup lime juice
  • 2 (14 1/2 oz) cans low sodium chicken broth
  • 1 jalapeno pepper, seeded, finely chopped
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 2 (4 ounce) cans chopped green chiles
  • 1 (15 oz) can cannellini beans, rinsed, drained
  • 1 (15 oz) can black beans, rinsed, drained
  • 1 (15 oz) can garbanzo beans, rinsed, drained
  • CHICKEN
  • 1 teaspoon butter
  • 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 2 teaspoons finely chopped garlic

Preparation

Step 1

1. Melt 1 tablespoon butter in 6-quart saucepan until sizzling; add onions. Cook over medium heat, stirring occasionally, until onions are golden brown (12 - 15 minutes). Add sherry, lime juice, chicken broth, jalapeno, oregano, coriander, cumin, and cinnamon. Continue cooking 5 minutes. Add chiles and beans. Continue cooking 10 minutes.

2. Meanwhile, melt 1 teaspoon butter in 12-inch skillet; add chicken and garlic. Cook over medium-high heat, stirring often, until chicken is no longer pink (8 to 10 minutes). Add chicken to soup mixture. Continue cooking 5 minutes.

3. To serve, ladle soup into individual bowls. Serve with condiments if desired
