Egg Breakfast Sandwich

Ingredients

  • 2 large eggs
  • 1 tbsp dill
  • 1 tbsp chives
  • salt and pepper
  • 2 english muffin halves, toasted
  • 2 slices cheddar cheese
  • 1 plum tomato, sliced

Preparation

Step 1

Crack the eggs into a bowl. Add herbs, pinch of both salt and pepper. ix together.

Scramble in a skillet or cook in a ring for a sandwich type of shape and consistency.

Place a slice of cheese and tomato slices on one half of the muffin. Place the egg and rest of cheese on next and top with remaining muffin top.
