Emeril's meatballs

Ingredients

  • 2 * 2 pounds ground pork/veal/beef combination
  • 3 * 3 eggs, beaten
  • 1 * 1 tablespoon chopped garlic
  • 1 * 1 small red onion, finely chopped
  • 1 * 1 tablespoon chopped fresh parsley leaves
  • 1/2 * 1/2 cup bread crumbs
  • * Salt and freshly ground black pepper
  • 1 * 1 tablespoon extra-virgin olive oil

Preparation

Step 1

Combine all ingredients except oil and gently mix to combine. Roll into 3/4-inch meatballs. You want the meatballs to be small and bite-sized. Heat the oil in a large skillet and cook the meatballs, in batches, until browned. Place onto a paper-towel lined plate and allow the meatballs to cool.

Yield: 20 to 25 meatballs
