Tomatoes in basil vinaigrette

Ingredients

  • 1/3 cup white wine vinegar
  • 1 tsp chopped fresh basil leaves
  • 1 tsp sugar
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp each salt & pepper
  • 1/2 cup olive oil
  • 1 ball mozzarella cheese
  • 4 large tomatoes, sliced
  • grated parmesan cheese
  • fresh cracked pepper

Preparation

Step 1

In blender, combine vinegar, basil, sugar, garlic, salt & pepper. Cover and blend until smooth. With blender running, pour in oil and continue blending until smoothly combines. Let stand 1 hour to blend flavours. Thinly slice mozzarella cheese. Arrange alternating slices of mozzarella and tomatoes on a platter.
To serve, stir dressing and pour over all. Sprinkle with parmesan and pepper.
