Butter Pecan Pancakes w/ Homemade Syrup

Ingredients

  • Syrup:
  • 2 cups buttermilk
  • 2 eggs
  • 1/4 cup melted cooled butter
  • chopped pecans
  • 2 cups flour
  • 3 TBS sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup boiling water
  • 1 cup brown sugar
  • pinch salt

Preparation

Step 1

Whisk buttermilk, eggs, butter together

Whisk flour, sugar, baking powder, salt, baking soda together.

Fold wet and dry ingredients together. Do not overmix. Add pecans. Batter will be lumpy.

Grease griddle and heat until hot. Add ladleful amounts of batter to skillet. Turn when ready.

Cook water brown sugar and salt until sugar is disolved.
