Reuben casserole

Ingredients

  • 1 can-27 oz-sauerkraut,rinsed and drained
  • 1 lb corned beef, coarsely shredded
  • 1 can cr of mushroom soup
  • 1 bottle thousand island dressing(8 oz)
  • 1 1/4 c milk
  • 1 med onion, chopped
  • 1 tsp dry mustard
  • 9 oven ready lasagna noodles (no boil)
  • 1 c shredded Swiss cheese
  • 1/2 c bread crumbs
  • t tbsp butter, melted

Preparation

Step 1

Preheat oven to 350. Coat 13x9 pan with cooking spray. In med bowl, combine sauerkraut and corned beef; mix well. In another med bowl, combine soup, dressing, milk, onion and mustard; mix well. Place 3 lasagna noodles in baking dish. Top with half of corned beef mixture, then half of soup mixture. Add 3 more noodles and remaining corned beef mix. Add remaining 3 noodles and top with soup mix. Top with swiss cheese, then sprinkle with bread crumbs and drizzle with butter. Cover with aluminum foil and bake for 45-50 min or until bubbly. Allow to sit for 5-10 min, then cut and serve.
