Chicken Taquitos

Ingredients

  • 2-4 boneless, skinless chicken breasts
  • 7-14 corn tortillas
  • seasoning salt to taste
  • sour cream
  • guacamole

Preparation

Step 1

1. Boil chicken in a pot seasoned with salt until cooked. About 20 min. Let cool a
little. Shred. Sprinkle seasoning salt to taste.
2. Heat vegetable oil in a deep pan for frying, about 2-3 in deep.
3. Add about 2 tbsp shredded chicken to a tortilla and wrap. Insert a toothpick
for support.
4. Add to oil. Make 1-2 more and add to pan. Turn when lightly browned. Take out
and drain on a rack a couple min and then keep in metal bowl while cooking the
rest.
5. Repeat until all chicken is used. Add sour cream and guacamole to plates and
serve.
