Delicious Gelatine Candy

From Ruth Nero Lense (as she signed it)

She made these at Christmastime and the whole family looked forward to devouring them!

Ingredients

  • 4 level Tbsp. (4 envelopes) Knox plain gelatin
  • 1 c. cold water
  • 1 1/2 c. boiling water
  • 4 c. sugar
  • 1/4 tsp. salt
  • Various fruit colorings and extracts to match

Preparation

Step 1

Soak gelatine in the cup of cold water for about 5 min. Heat sugar and boiling water to boiling point, add softened gelatin and boil slowly for 15 min. Remove from fire and divide the liquid into several parts, depending on the number of flavors one wishes to make. Orange extract and 1 Tbsp. fresh orange juice and some orange fruit coloring for one portion. A few drops of peppermint oil and green coloring for another; lemon extract and 1 Tbsp. fresh lemon juice for the third portion are suggestions for a nice variety.

Pour the flavored and colored candy into small loaf pans or candy tins, which have first been rinsed in cold water, and put in cool place (not a refrigerator) allowing candy to thicken for AT LEAST 12 HOURS.

With a wet sharp knife loosen about edges of pan and turn out. Cut into cubes and roll in granulated sugar.

This recipe makes about 200 pieces of candy.
