Eggs A-La-King

Ingredients

  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • 1 1/2 Tbsp. catsup
  • 5 eggs, hardboiled and cut into slices lengthwise
  • 1 c. sliced mushrooms
  • 3 Tbsp. diced green pepper
  • 3 Tbsp. butter
  • 1/3 c. peas
  • 3 Tbsp. minced pimentios
  • salt and pepper

Preparation

Step 1

Melt the 1/4 c. of butter in double broiler and stir in the 1/4 c. flour to make a smooth paste. Gradually add the milk and cook stirring until thickened. Add the catsup and cook over goiling water for 10 min. Place hardboiled and sliced eggs aside. Saute the sliced mushrooms and green pepper in the 3 Tbsp. butter. Combine with the peas and pimentios. Stir eggs and combine vegetables into the white sauce. Season to taste with salt and pepper and cook for 10 min. longer.
