Curried Ham and Eggs

May be accompanied with small dishes of raisins, peanuts, chutney and chopped apples Indian style to suit individual tastes. Can be also used as an entree with fruit-type dessert.

Ingredients

  • White sauce:
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 1 tsp. seasoning salt
  • 1 tsp. curry
  • 2 c. milk
  • 2 c. diced cooked ham
  • Hard boiled eggs to suit your family
  • Cooked rice.

Preparation

Step 1

White sauce:
Blend flour, seasoning salt and curry in butter, which has been melted over low heat. Gradually add milk. Return to heat and continue stirring until thick and smooth.

Now add the ham and hard boiled eggs.

Serve on a bed of rice.
