VEGETABLE FRIED RICE

Ingredients

  • 1 tbsp vegetable oil
  • 3 green onions, chopped
  • 1 1/2 tsp minced ginger-root
  • 1 clove garlic, minced
  • 3 cups cold cooked rice
  • 1 cup frozen peas
  • 1/2 cup blanched, diced carrots
  • 1/4 cup snow peas, cut into 1" pieces
  • 1/2 red bell pepper, cut into thin strips, 1 1/2" long
  • 2 tbsp soy sauce

Preparation

Step 1

In a large non-stick skillet, heat oil over high heat. Add green onions, ginger and garlic; cook, stirring, for 15 seconds or until fragrant. Add rice, peas and red pepper; cook, stirring often, for 5 to 7 minutes or until rice is heated through and vegetables are tender. Stir soy sauce into rice mixture and cook for 1 to 2 minutes or until heated through. Serve immediately.

Can add fried chicken pieces also.
