Apple and Oat Bran Muffins

Ingredients
- 1 1/4 cups whole wheat flour
- 1 cup oat bran
- 1/2 cup packed brown sugar
- 2 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1 cup buttermilk
- 2 egg whites
- 2 Tbsp cooking oil
- 3/4 cup shredded peeled apple
- Nonstick spray

Preparation
Step 1
In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside.
In a small bowl, combine buttermilk, egg whites and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple. Store batter, tightly covered in the refrigerator for up to 3 days.
To bake, spray muffin cups with nonstick spray. Spoon about 1/4 cup batter into each muffin cup. Bake in a 375 degree oven for 18-20 min or until a toothpick inserted near center comes out clean.
