Ingredients
- 1 1/4 cups water
- 1 1/2 cups couscous
- 1 1/4 lb filet mignon steaks, sliced finely
- 1 1/2 tablespoons grated fresh ginger
- 2 cloves garlic, crushed
- 3 cardamom pods, crushed
- 1 teaspoon cumin seed
- 1 1/2 tablespoons hot curry paste (vindaloo)
- 3 tablespoons vegetable oil
- 2 medium onions, sliced
- 2 small tomatoes, chopped
- 1/4 cup plain yogurt
- 1 beef bouillon cube
- 1/3 cup water, extra
- 1 1/2 tablespoons chopped fresh cilantro
Preparation
Step 1
Bring: water to boil in pan, add couscous, cover, let stand 5 minutes or until water is completely absorbed
Combine: beef with ginger, garlic, cardamom, cumin, and curry paste in bowl. Heat oil in large pan; cook beef mixture, in batches, until tender. Remove from pan
Add: onion to same pan; cook, stirring until soft. Return beef to pan with couscous, tomato, yogurt, crumbled bouillon cube and extra water, stir over heat until hot.
Serve sprinkled with fresh cilantro
