Cinnamon Spiced Pecans

  • 1 pound pecan halves
  • 2 large egg whites
  • 1 teaspoon water
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt

Step 1

Preheat oven to 225 degrees and either spray a sheet pan with cooking spray or line it with foil or parchment (I use a Silpat mat. Love that thing!).

In a small bowl, combine sugar, salt, and cinnamon and set aside. In a large bowl, combine egg whites, water, and vanilla. Whip the mixture with an electric mixer until it just starts to get fluffy. Add in the pecan halves and toss until they are evenly coated. Sprinkle the sugar mixture over the nuts and toss again until evenly coated. Pour the nuts onto the baking sheet and scatter into a single layer. Bake for about one hour until the coating is dry, stirring every 15 minutes. Cool completely and store in an air-tight container.
