Spicy Chicken and Coconut

Ingredients

  • 3 tablespoons peanut oil
  • 6 boneless, skinless chicken thighs, chopped
  • 2 medium onions, sliced
  • 1 large sweet red bell pepper, chopped
  • 1 cup coconut milk
  • 1/4 cup red curry paste
  • 1 1/2 tablespoons fish sauce
  • 1/2 cup water
  • 1/4 cup shredded fresh basil

Preparation

Step 1

Heat half the oil in large pan; cook chicken, in batches, until browned and cooked through, remove from pan

Heat remaining oil in same pan; cook onion and bell pepper, stirring, until onion is soft.

Return chicken to pan with coconut milk, curry paste, sauce and water; stir over heat until mixture boils. Stir in basil.
