Ingredients
- 8 chicken breasts
- 1 lemon, juiced
- salt
- 1/2 cup plain yogurt
- 1 tbsp olive oil
- 1/2 small onion, chopped
- 3 cloves garlic, smashed
- 1 tbsp ginger
- 4 tsp tomato paste
- 2 tsp coriander
- 1 tsp cumin
- 2 tsp paprika
- 2 tbsp cilantro, chopped
Preparation
Step 1
Preheat the broiler. Pierce the chicken with a knife a few times. Toss chicken with lemon juice and salt in a large bowl.
in a food processor, pulse 2 tbsp yogurt, olive oil, onion, garlic, ginger, tomato paste, coriander, cumin, half paprika and salt to make a paste. Toss the chicken in the mixture and marinate 15 minutes.
Place the chicken on a foil lined baking sheet. Broil, turning once, until slightly charred, 5-6 minutes per side.
Optional: combine 1/2 cup yogurt and 1/2 tsp paprika, cilantro, pinch of salt in a bowl. Top chicken with yogurt sauce. Serve with rice.
