Slow Cooker Chicken Parmesan for Two

Regular chicken Parmesan is coated with read crumbs, sautéed, then cooked in a marinara sauce and served over cooked spaghetti. In a slow cooker, the bread crumbs are sprinkled on top of the dish just before serving, so they don't get mush. This flavorful entrée is a wonderful way to use chicken breasts.

Ingredients

  • 2 boneless, and skinless chicken breasts
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 1/2 cups spaghetti sauce
  • 1/2 cup minced onion
  • 1 garlic clove, minced
  • 1 Tablespoon unsalted butter
  • 5 tablespoons panko bread crumbs
  • hot cooked spaghetti
  • grated parmesan cheese (optional)

Step 1

1. Sprinkle the chicken breasts with Italian seasoning, salt and pepper.
2. In a slow cooker, combine the spaghetti sauce, onion, and garlic. Top the mixture with the chicken.
3. cover and cook on low for 5 hours, or until the chicken registers 160 degrees F on an instant-read thermometer.
4. When the chicken is almost done, melt the butter in a small saucepan over medium heat. Sauté the bread crumbs until golden brown.
5. Serve the chicken and sauce over hot cooked spaghetti; sprinkle with bread crumbs and Parmesan cheese (if using).
