  • 1 c flour
  • 1 t ginger
  • 1 t cinnamon
  • 1/2 t baking soda
  • 1/8 t cloves (can sub allspice)
  • 1 1/2 c quick cooking oats uncooked
  • 3/4 c brown sugar, firmly packed
  • 3/4 c pitted dates (maybe)
  • 1/2 c boiling water
  • 1/4 c unsalted butter
  • 1 egg
  • 2 egg whites
  • 2 t vanilla
  • 1 c powdered sugar, sifted
  • 2 T milk
  • 1/2 t vanilla

Step 1

Preheat oven to 375. Sift together first 5 ingredients in a bowl and stir in oats. In a food proce4ssor, combine brown sugar and dates. Process until dates are finely chopped. Add boiling water and butter. Process until mixture is smooth. Add egg, egg whites, and vanilla to date mixture. Process to blend. Transfer to the flour mixture and mix thoroughly by hand. Lightly butter a 9x13 baking dish. bake 18-20 min or until center comes out clean. Transfer to a wire rack to cool 5 min. Combine pow sugar, milk, and vanilla in a bowl to make frosting. Spread frosting over the bars and cool completely before serving.
