Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 2 tbsp vegetable oil
- 1/2 c ketchup
- 3 tbsp light soy sauce
- 1/8 tsp black pepper
- 2 tbsp all-purpose flour
- 1 lrg onion, halved and cut into thin slices
- 2 green bell peppers, seeded, cored and cut into thin slices
- 1 can sliced mushrooms, drained
- Rice for side (optional) 1:2 ration (1 part rice + 2 parts water)
Preparation
Step 1
1. Heat oil in a large nonstick skillet over med-high heat. Add chicken and cook 5 min, stirring occasionally.
2. In a med-size bowl, whisk 1 c water, ketchup, soy sauce & black pepper; gradually whisk in flour.
3. Remove chicken from skillet. Stir in water-ketchup mixture & bring to boil; add chicken and onion.
4. Reduce heat to simmer & cook, covered for 20 minutes, stirring occasionally.
5. Add bell peppers and mushrooms & simmer, covered for 15 minutes, stirring occasionally. *Serve with rice.
*Bring rice and water to a boil. Cover and simmer for 20 min. DO NOT OPEN LID DURING THE 20 MIN. Serve
