Beef Bourguignon is a classic French dish made of cubes of beef cooked in wine.   • 2 slices bacon
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 8 button mushrooms, sliced
  • 1/2 cup low-sodium beef broth
  • 1 cup dry red wine
  • 2 TBLS. tomato paste
  • 1/2 Lb. sirloin steak, cut into 1-inch cubes
  • 1/2 tsp. salt
  • freshly ground pepper
  • 1/2 tsp. dried marjoram
  • 1 TBLS. cornstarch
  • 3 TBLS. water

1. In a small skillet over medium het, cook the bacon until crisp. Drain the bacon on paper towels, crumble, and set aside.

2. Cook the onion, garlic, and mushrooms in the bacon drippings in the skillet for 3-4 minutes until crisp-tender. Add the broth, wine, and tomato paste and stir well. Place this mixture in the slow cooker.

3. sprinkle the steak with the salt, pepper, and marjoram, and add it to the slow cooker along with the bacon.

4. Cover and cook on low for 6 to 7 hours or until beef is tender.

5. In a small bowl, whisk together the cornstarch and water. Stir the mixture into the slow cooker; cover and cook on high for 10 to 15 minutes or until the sauce thickens. serve over hot cooked egg noodles.
