Persian Spinach and yogurt Dip

Ingredients

  • 2 qts water
  • 1 10 oz package fresh spinach, chopped or use frozen spinach
  • 2 tspns oil
  • 1/3 cup finely chopped sweet onion
  • 1 garlic clove, minced
  • 1/2 tspn salt
  • 1 cup plain fat free yogurt
  • 1/4 tspn pepper
  • 1/8 tspn ground cinnamon

Preparation

Step 1

Heat oil, add onion and garlic, cook 6 mins. or until onion is tender, stirring occassionally. remove from heat, stir in spinach and salt. cool to room temp
combine spinach mix, plain yogurt, black pepper and ground cinnamon in a med bowl. let stand for 30 mins. refreigerate until chilled.
