Lemon-Blueberry Bread

Ingredients

  • Glaze:
  • 1/3 cup melted butter
  • 1 cup sugar
  • 3 TBS lemon juice
  • 2 eggs
  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • `/2 cup milk
  • 2 TBS grated lemon zest
  • 1 @ cup chopped walnuts (I add a few more)
  • 1 cup fresh or frozen blueberries
  • 1 TBS melted butter
  • 1 TBS lemon juice
  • 1 cup powdered sugar
  • Mix all ingredients for glaze together and drizzle on bread as per directions below.

Preparation

Step 1

Preheat over to 350 degrees. Lightly grease an 8 X 4 inch loaf pan.

Beat together butter, sugar, juice, and eggs. Combine flour, baking powder and salt, stir into egg mixture alternately with milk. Fold in lemon zest, nuts, and blueberries.

Pour batter in prepared pan.

Bake in preheated oven for 60 to 70 minutes, until a toothpick inserted in center comes out clean. Cool bread in pan for 10 minutes. Remove from pan and drizzle with glaze. Cool on wire rack.
