Slow Cooker Lentil Soup for Two

Lentil soup is a classic recipe for the slow cooker. for meat lovers, you can add diced ham or some cooked crumbled bacon. The tomato and lemon juice are stirred in at the end because those acidic ingredients would prevent the lentils from softening in the liquid.
Ingredients
- 3/4 cup dried lentils
- 3 1/2 cups water or low-sodium vegetable broth
- 1/2 cup minced onion
- 1 garlic clove, minced
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 1/2 tsp. cried basil
- 1/2 tsp. salt
- 1 tomato, chopped
- 1 TBL freshly squeezed lemon juice

Step 1
1. Pick over the lentils to remove any shriveled legumes or extraneous material. Rinse the lentils and drain them in a colander.
2. In the slow cooker, combine the lentils, water, onion, garlic, carrot, celery, and basil. cover and cook on low for 5-6 hours or until the lentils are tender.
3. Stir in the salt, tomato, and lemon juice. Cover and cook on low for 1 to 2 hours longer or until the flavors have melded.
Serve hot.
