Slow Cooker Sausage and Pepper for Two

Here's a classic Italian dish made in slow-cooker style. You can use sweet or hot Italian sausages, or try bratwurst or Polish sausages. If you use uncooked sausages , brown them in a skillet before you put them in the slow cooker to reduce the fat and add flavor and color to the finished dish.

Ingredients

  • 3/4 Lb. hot or sweet Italian sausages
  • 2/3 cup dry red wine or low-sodium beef broth
  • 3 TLBS. tomato paste
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1 red bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 tsp. dried oregano

Step 1

1. Prick the sausages with a fork, then cook them in a small skillet in a small amount of water until browned, turning occasionally, about 10 minutes. Remove the sausages and set aside. Add the wine and tomato paste to the skillet, scraping up any brown bits from the bottom of the pan.

2. Place the onion and garlic in the slow cooker and top them with the sausages. Add the pepper, tomatoes, and oregano, and then pour in the wine mixture from the skillet.

3 cover and cook on low for 5-6 hours or until sausages register 165 degrees F on an instant read thermometer.
