Ingredients
- 500 g rump steak (beef) thinly sliced
- 1 tbs peanut oil
- 1 onion large sliced
- 1 garlic clove
- 1 red chilli small thinly sliced optional
- 1 tsp lemon rind grated
- 3 tsp curry powder *to taste
- 1 tbs soy sauce
- 2 tbs peanut butter large
- 250 g coconut milk
- 2 tbs fresh coriander
Preparation
Step 1
Heat pan, add oil, onions, chilli, garlic, lemon rind and curry powder and cook for 1 minute.
STEP 2 Add meat and cook until just brown.
STEP 3 Add soy sauce, coconut milk and peanut butter and stir until smooth.
STEP 4 Reduce heat and simmer for 5 minutes.
STEP 5 Stir in coriander and serve.
I serve rice with this dish. To make this low fat, you could use light peanut butter and light coconut milk. Substitute steak with chicken breast tenderloins if desired. Chilli is optional.
