- 1 1/2 cups graham cracker crumbs
- 1/3 cup light butter - melted
- 3 tablespoons sugar
- 3 packages (8 oz. each) cream cheese - softened
- 3/4 cup sugar
- 1 teaspoon vanilla
- 3 large eggs - slightly beaten
Mix crumbs, butter & 3 tablespoons of sugar; press into the bottom of mini muffin liners. Mix cream cheese, remaining sugar & vanilla with electric mixer on medium speed until well blended. Add egg, mix until blended. Spoon into prepared liners.
Bake at 350 degrees for 15 - 20 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Store leftovers in to refrigerator. Makes 64 mini bites.
**Can use this same recipe to make cheesecake bars. Put in a 13 x 9 baking dish. Makes 12 bars.
