Ingredients
- 2 small onions, chopped
- 6 garlic cloves, smash & slice
- 1/4 cup olive oil
- 2 T. dried parsley
- 2 tsp. dried basil
- 1 tsp. Italian seasoning
- Salt and Pepper to taste
- 50 oz. (3# 2oz.) diced tomatoes with juice

Step 1
Heat oil over a medium heat in stock pot.
Add onion and garlic, sauté for about 2 min., until soft (do not over brown onion and garlic)
Add spices to onion and garlic mixture. Cook for and additional minute.
Add tomatoes with juice and salt and pepper.
Simmer for 20 minutes. ***Blend using immersion blender and enjoy.

***At this point you can quick cool and then puree using immersion blender. Allow flavors to blend and infuse overnight.
Reheat and enjoy.
