Ingredients
- 1 c. whole almonds
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 19 tablespoons butter, softened
- 1 c. packed brown sugar
- 1/2 c. sugar
- 2 large eggs
- 1 tsp. vanilla
- 1 tsp. coconut extract
- 1 12oz bag of semi sweet chocolate chips
- 2 c. sweetened flaked coconut

Step 1
Rough chop the almonds by hand.Place almonds in a skillet, cook over low heat stirring often. Cook until lightly toasted and fragrant (5 min). Transfer to a bowl to cool.
In a small bowl, whisk together flour, baking powder and salt. Set aside. In a large bowl, beat butter, and both sugars with a mixer until fluffy. Beat in eggs and extracts. Stir in flour mixture until combined. Mix in coconut on low speed. Stir in almonds and chocolate chips by hand.
Chill dough while preheating the oven and between batches.
Spoon dough on non-stick baking sheets. Bake at 350 degrees until edges are brown, about 13 minutes.
