Ingredients
- For about 1 Ib. you will need:
- 1-1/2 cups dry-roasted unsalted
- peanuts
- 1 cup granulated sugar
- 3/4 cup light corn syrup
- 1 Tbsp. whipping cream
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. water
Preparation
Step 1
1.Place peanuts in a shallow baking
pan. Bakeat275°F for about 5 minutes
or until heated through.
2. In a lightly greased saucepan,
combine the sugar and corn syrup.
3. Cook over low heat, stirring
constantly until sugar is dissolved.
4. Remove from heat. Clean sides
of pan with a damp paper towel.
5. Put pan back over heat. Cook
over low heat, stirring until crack
stage (that is when the syrup forms
a soft crack when dropped into cold
water). If using a candy thermometer
it should register 275°F.
6. Lower heat. Add whipping cream
and peanuts. Cook for another 4 to
5 minutes, stirring.
7. Cook over low heat until mixture
forms a hard crack when dropped
into cold water, about 5 minutes,
stirring constantly.
8. Remove from heat. Stir in vanilla,
baking soda and water. Stir for a few
seconds until foamy.
9.Pour candy onto greased baking
sheet. Spread evenly over sheet as
thin as possible.
10. When cool, break into pieces.
Store airtight.
