Roasted Tri Tip with Tomatoe Butter

Busy cooks love to make roasts because they're quick and easy. This recipe
is especially good because of the savory tomato butter.

Ingredients
- 2 Ibs. Tri tip roast
- 3 cloves garlic, minced
- 1/2 tsp. seasoned salt
- 1/4 tsp. pepper
- 1/2 cup butter, softened
- 3 Tbsp. tomato paste
- 1 clove garlic
- 1 Tbsp. fresh oregano leaves,
- minced
- 1 Tbsp. fresh basil leaves,
- minced
- 1/4 tsp. salt
- 1 to 2 Tbsp. all-purpose flour
- Fresh oregano and basil leaves,
- for garnish, optional
Preparation
Step 1
1) Rub roast with garlic, salt and
pepper.
2) Mix softened butter with tomato
paste, garlic, oregano, basil and
salt. Spread evenly over roast.
3) Place roast in a roasting pan.
4) Bake at 350°F for 1 hour, basting
every 10 minutes. Remove from
oven. Let sit for 10 minutes..
5) Mix pan juices with flour. Cook
in a saucepan until thickened.
6) Slice meat. Serve with thickened
pan juices. Garnish with oregano
and basil, if desired.
