Ingredients
- For 8 servings you will need:
- 3 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 1-1/2 cupsmilk
- 12 oz. white chocolate chips
- 2 tsp. vanilla
- 5 egg yolks
- 7 egg whites
- Dash cream of tartar
- 1/4 cup + 2 Tbsp. granulated sugar
- 10 oz. frozen raspberries
Preparation
Step 1
1.) Melt the butter in a saucepan
over medium heat. Stir in the flour.
Cook for 1 minute.
2.) Lower heat. Gradually stir in
the milk, whisking constantly until
the mixture is thick and smooth.
Remove from heat.
3.) Add the white chocolate to the
milk mixture. Whisk until melted.
Stir in the vanilla. Gradually beat
some of chocolate mixture into
beaten egg yolks. Slowly add to rest
of chocolate mixture, whisking
constantly.
4.) Butter a 21/2-quart souffle dish.
Coat with 2 tablespoons sugar.
5.) Beat the egg whites with the
cream of tartar until foamy. Beat
in the % cup sugar, 1 tablespoon at
a time, until stiff and glossy.
6.) Gently fold the egg whites into
the souffle base. Pour the batter
into the prepared dish.
7.) Bake at 375°F for 40 minutes.
8.) In a blender or food processor,
puree the frozen raspberries.
9.) Serve the souffle with the raspberry
sauce immediately after removing
from the oven.
