Cherry Almond Granola

This granola works wonderfully with any kind of dried fruit. Just be sure to stir it in after baking, otherwise it will become hard.

Ingredients

  • 5 cups rolled oats
  • 2 cups unsweetened shredded coconut
  • 2 cups chopped almonds
  • 1 cup dry quinoa
  • 2 teaspoons ground nutmeg
  • 1 1/2 tablespoons ground cinnamon
  • 1 cup maple syrup
  • 2/3 cup coconut oil, melted
  • 2 egg whites
  • 2 cups dried cherries

Preparation

Step 1

Preheat oven to 325 degrees. Line two large baking sheets with parchment paper.
In a large bowl, combine oats, coconut, almonds, quinoa, nutmeg and cinnamon. In a small bowl, whisk together maple syrup and coconut oil. Add to the dry ingredients and stir until evenly coated.
Whisk egg whites until light and frothy. Add to granola and stir to combine.
Pour mixture onto prepared baking sheets and spread into an even layer. Bake in preheated oven 30 to 35 minutes, until golden brown. Allow to cool on pan at least 1 hour. Stir in dried cherries. Store in an airtight container.
