Lise’s Almond Salad

Ingredients

  • Dressing:
  •  1 tbsp. Sugar
  •  1/2 cup olive oil
  •  1/4 cup vinegar
  •  1/2 tsp. salt
  •  1/2 tsp. parsley
  •  dash of Tabasco
  • Combine in a frying pan and heat until the sugar is melted. Transfer to a bottle and let cool. Dressing will keep for up to a week in the fridge.
  • Almond topping:
  •  1/2 cup sliced or slivered almonds
  •  2 tbsp melted butter
  •  1/2 cup sugar

Preparation

Step 1

Combine in a sugar and butter in a saucepan. Stir constantly until melted. Then add almonds. Set aside to cool. Break off to top off a green salad made from green leaf lettuce, 1 can drained mandarin oranges (or you can use strawberries) and 3 chopped green onions. Enjoy.
