Bread Pudding

Ingredients

  • 1 cup hot water
  • 1 cup whole milk
  • Stevia equivalent to 1/2 cup sugar
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons each: ground cinnamon, nutmeg
  • 1 teaspoon each: allspice, mace
  • 6 cups stale artisan bread, chopped or crumbled (stale French
  • bread may be substituted)
  • 2 large eggs
  • 1/2 cup golden raisins or Sultanas, coarsely chopped
  • 1/2 cup fresh apple, peeled and finely chopped
  • 2 teaspoons coconut oil or butter
  • Stevia equivalent to 4 1/2 teaspoons of sugar (for topping)

Preparation

Instructions:
In mixing bowl, use an electric mixer to combine the hot water with the
milk, stevia, vanilla and spices. Stir in the chopped or crumbled bread,
again using the electric mixer to combine. Add the eggs, one at a time,
beating lightly after each addition. Set the electric mixer aside. With a large
mixing spoon, stir into the mixture the golden raisins or Sultanas, and apple.
Cover the bowl tightly, and refrigerate overnight. To cook, pre-heat oven
to 350 degrees. The chilled, soaked bread mixture should drop easily from a spoon. If the mixture is too wet, add a bit more crumbled bread; if the
mixture is too dry, add a bit more water. Stir thoroughly, then scoop the
mixture into a square baking dish prepared with 2 teaspoons coconut oil or
butter. Bake at 350 degrees for 1 hour or until done in the center. Remove
from oven. Set aside on a metal baking rack to cool completely. To serve,
cut into equal 9 pieces and transfer to individual serving dishes. Sprinkle
each piece with ½ teaspoon additional stevia.
